An Extraordinary Tilapia Curry with Taro Stems: A Taste of Something New

Seeking a flavor profile beyond the usual routine, I decided to cook tilapia with taro stems (*kochu loti*). Honestly, the dish turned out so delicious that I simply had to share it with you. We usually eat tilapia as a spicy dry curry (*bhuna*) or a light stew (*jhol*). However, pairing it with taro stems created a truly extraordinary combination. A common challenge with cooking taro stems is the risk of throat irritation or a bland, watery taste; yet, when prepared correctly, they transform into a wonderfully tasty vegetable. First, I cleaned and washed the tilapia thoroughly, coated the pieces with turmeric and salt, and fried them until golden-red. Meanwhile, I trimmed and washed the taro stems, then blanched them briefly to eliminate any risk of throat irritation. For the main cooking process, I heated oil in a pan and sautéed chopped onions. Once the onions turned golden, I added ginger-garlic paste, cumin powder, turmeric powder, and chili powder (to taste), sautéing the mixture well. Proper sautéing of the spices is crucial for bringing out the dish's true flavor. When the oil began to separate and float to the surface, I added the blanched taro stems. I mixed the stems thoroughly with the spices and covered the pan for a while, allowing the flavors to penetrate the vegetable. Next, I added the required amount of water and brought the curry to a boil. Once the gravy was boiling, I carefully added the fried tilapia pieces. It is best not to cook the fish for too long after adding it. When the gravy reached a rich, thick consistency, I lowered the heat and let it simmer gently (*dum*). And just like that, the delicious tilapia curry with taro stems was ready. This dish tastes amazing with hot steamed rice.
