Once fried, remove the fish and set it aside. Now, heat some more oil in the same pan. Add the chopped onions and sauté until golden brown. Once the onions are fried, add the ginger and garlic pastes and sauté well. Next, add the powdered spices one by one—turmeric, chili, and cumin powders—along with salt to taste. Add a splash of water and sauté the spice mixture thoroughly until the oil begins to separate. Now, add the tomato cubes and green chilies. Cook over medium heat until the tomatoes soften and break down completely. If the mixture dries out and oil starts to separate, add a little more water and sauté well again. Now, add the fried fish pieces to the spice mixture. Gently toss everything together to coat the fish evenly with the spices. Pour in the required amount of hot water—depending on how much gravy you prefer—cover the pan, and let it simmer for 10–12 minutes. Stir occasionally to prevent the mixture from sticking to the bottom. Once the gravy thickens to a rich consistency and the oil begins to float on the surface, sprinkle chopped coriander leaves over the top; let it cook for another 2–3 minutes before removing from the heat.
